Passion Fruit Chia Pudding with Pumpkin Coconut Cream

Passion fruit is a very strong source of fiber, which is an essential part of a healthy diet, as it is the substance that allows for healthy digestion of food and regulation of bowel movements.

Ingredients

100g passion fruit pulp @acaiamsterdam

30g chia seeds

100ml coconut yoghurt

100g pumpkin puree

pumpkin spice

Necessary kitchen utensils

Prepare

Combine the passion fruit pulp, pumpkin spice and chia seeds in a jar.

Feel free to melt the passion fruit already, but since the chia seeds need to be there to absorb the liquid, you can also break it up like I did and let it melt itself. Put this in the fridge for at least 3 hours.

Mix the coconut yogurt with pumpkin puree (optionally add maple syrup/vanilla for more sweetness).

Add the pumpkin coconut cream to the chia pudding. Top with dried mulberries, banana, soy crisps!
